High Protein Tuna Egg Salad Wrap

- 1 Mi Rancho Simply Nourished Low Carb Tortilla
- 1 can albacore tuna (drained)
- 1–2 soft-boiled eggs (chopped)
- ½ avocado
- 1 cup romaine lettuce
- 1 tbsp Greek yogurt or mayo
- ½ tsp mustard
- Salt, pepper, paprika, optional fresh dill or parsley
- Optional toppings: avocado slices, chili crisp, capers
Instructions
Begin by boiling 1-2 eggs on medium high for 8 minutes or until soft boiled.
Slice up ½ an avocado into thin slices and chop romaine lettuce and soft-boiled eggs into ½ inch pieces.
In a bowl, add 1 can of drained tuna, the chopped lettuce and eggs, along with 1 tbsp of mayo, ½ tsp mustard, season with salt, pepper and paprika.
Assemble the salad onto a Mi Rancho Simply Nourished Low Carb, topping it with avocado slices and rolling it tightly.
On a heated pan, toast the wrap until golden.
