How do I heat my tortillas?

There are many ways to heat up your tortillas! Our favorite method is using a hot, dry skillet. First, bring your tortillas to room temperature  and then warm the tortilla for about 30 seconds on each side or until it starts to puff up slightly. How do I freeze my tortillas?

If the product is unopened, leave it that way. If you’ve already opened the package, leave the product in the package, press out any additional air, and seal well. For added protection, we recommend placing the package inside of a freezer-safe zip-lock bag.

Lay the tortillas down flat in your freezer. Keep in mind that the product will freeze in whatever position you place them, so you want them to be flat to maintain the integrity of the tortilla. The product should last about six months in the freezer. Check out some of our favorite tips and tricks when using Mi Rancho offerings.

How do I thaw my tortillas after they have been frozen?

24 hours before you’re ready to use the tortillas, move the package, or amount of tortillas you plan to use, from the freezer to the refrigerator. Gradually thaw the tortillas in the refrigerator. 30 minutes before use, place the package at room temperature. 

Do not place the frozen tortillas in a microwave to thaw out quickly, as it may cause the tortillas to stick together and become brittle.

Does Mi Rancho produce in a facility that produces peanuts or tree nuts?

At this time, we do not process peanuts, tree nuts, dairy, eggs, and fish in our facility. Mi Rancho has a HACCP program in place and we operate under stringent HACCP pre-requisite programs including an Allergen Control Program. The allergen control program , which covers the “Big 9 Allergens” includes segregation of allergens, raw ingredients, dedicated production lines, etc. as preventative measures.

What is the shelf life of your products?

The ambient shelf life on our products varies from product to product. The best way to ensure your products are within shelf life is to check out the “Best by” date printed on all of our products. This is where the product is at optimal quality and freshness.

Do I need to refrigerate my tortillas?

Our tortillas are shelf stable but we do recommend refrigerating them after opening to ensure freshness.

Why is there condensation in my tortilla package?

Condensation is a naturally occurring process for our tortillas that is primarily seen in our corn tortillas. We minimize this by allowing our tortillas to cool during the production process before packaging. However, condensation is natural and does not make the tortillas unsafe to consume.

Are your products shelf stable?

Our offerings are shelf stable. However, our salsas must be refrigerated after opening to ensure their freshness.

Why is there lime in your corn tortillas?

In our efforts to stay true to the ancient process of Nixtamalization, we use mineral lime. Mineral lime is the necessary ingredient used in the nixtamalization process of cooking corn to gelatinize starches, release healthy nutrients and produce natural emulsifiers that tenderize the finished tortilla.

What is Nixtamalization?

While this process isn’t unique to Mi Rancho, it is rare to find in today’s tortilla market as most corn tortillas are made from corn flour and water. 

During Nixtamalization, we steep corn for 10-12 hours to allow the mineral lime to break down the outer hard shell, or pericarp, and the water to penetrate the kernel. This process of cooking corn gelatinizes starches, releases healthy nutrients and produces natural emulsifiers that tenderize the finished tortilla. The cooked corn, or nixtamal, is then washed or rinsed. We then grind the corn using hand-carved lava stones into a fine or coarsely ground masa, with the texture varying depending on the intended use of the masa.

Where do you source your corn?

We source our organic, non-GMO whole kernel corn from local farmers in the Sacramento Valley in California!

Where are your products made?

Our retail tortillas, chips and salsas are all proudly made in California since 1939!

Are your products Gluten-Free?

Our corn tortillas are gluten free with our organic corn tortillas (Organic Taco Sliders, Organic Corn Tortillas and Organic Thincredibles) Organic 7th Street Chips being certified gluten free by GFCO. We have recently made a new addition to the certified gluten free family with our Simply Nourished Gluten Free tortillas and family of Organic Salsas.

Our current fulfillment process is 2-3 business days with Friday orders being fulfilled the following week for optimal freshness.

Can I order in smaller pack sizes?

We currently offer our tortillas in pack sizes of 3 and 6. We’re always open to feedback, if you are interested in another pack size please don’t hesitate to reach out to us.

How do I know if you have received my order?

You will receive a confirmation email after your purchase has been made that will confirm order receipt.

How do I know when you have shipped my order?

Our current fulfillment process is 1-2 business days with Friday orders being fulfilled the following week for optimal freshness. Please check your inbox for individual emails containing tracking information for each shipment.

I only received part of my order, where is the rest?

We ship all products individually for optimal freshness. Therefore, some items may arrive before others. Please make sure to keep an eye on each individual tracking number for estimated arrival times.

Currently, we have a flat shipping rate of $7.50 across the United States. If you order $50 or more, you will automatically receive free shipping!
