Buffalo Turkey Grilled Pizzas

Grilling pizzas with Mi Rancho Simply Authentic Fajita Flour Tortillas are a fun way to BBQ outside and use tortillas in a non-traditional way. Who knew they’d make the perfect crust?

Ingredients

  • 1 tbsp olive oil
  • ½ cup white onions (diced)
  • ½ cup celery (chopped)
  • 3 cloves garlic (minced)
  • 1 lb ground turkey
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ cup buffalo sauce
  • 8 oz cream cheese
  • ¼ cup blue cheese dressing
  • 4 Mi Rancho Simply Authentic Fajita Flour Tortillas
  • 4 oz blue cheese (crumbled)

Garnishes:

  • 2 ounces cotija cheese, crumbled
  • 2 radishes, cup into matchsticks

Instructions

Heat the olive oil in a large skillet over medium-high heat.

Add the white onion and celery. Sauté 8-10 minutes. Add the garlic and sauté for an additional 1-2 minutes.

And the ground turkey and cook through.

Sprinkle with salt and pepper, then add the buffalo sauce.

Reduce to low and simmer 6-8 minutes.

In the meantime, combine the cream cheese and blue cheese dressing in a small bowl.

Lay the tortillas out on a cutting board and spread the cheese mixture evenly over the tortillas.

Spoon the buffalo turkey over the top.

Sprinkle the crumbled blue cheese on top.

Place on the grill over medium heat.

Grill for 10-12 minutes (or until the tortilla is crispy and the cheese is melted) and serve.

One flatbread (or two if you’re really hungry!) is perfect for a meal, or you can slice each flatbread into quarters, then serve them as an appetizer at a party or BBQ!

♣ Vegetarian Option: Substitute meatless ground turkey to make this recipe vegetarian.

♦ Gluten Free Option: Substitute the flour tortillas for Mi Rancho Corn Tortillas to make this recipe gluten free. Always make sure the brand of Blue Cheese Dressing used is gluten-free (the bottle pictured above is gluten-free).

We all know that there is nothing I love more than adding buffalo sauce to virtually anything and everything… but then when you add cheese… and meat… and put it on a tortilla… then grill it, well I’m basically in heaven!

I started off with soft, thick, delicious tortillas from my new partner, Mi Rancho. Seriously if you haven’t tried their tortillas, you need to!

They’re a family company and their flour tortillas are called “Mama’s” because it tastes like their Mama actually made them right there in your kitchen. I have a hard time not eating them all up as a snack. Dip them in a little homemade salsa, yum!

Needless to say, I knew that they would be perfect for grilling because they’re nice and thick and would not fall apart on the grill.
Now was the time when I needed to decide what I was going to top them with. My mind immediately went to something “Buffalo Style” since it’s been exactly one month since my last recipe featuring buffalo sauce (and heaven forbid I go a month without buffalo sauce on Little Leopard Book).

Since a lot of my buffalo style recipes involve chicken, I decided to mix it up with ground turkey for this recipe, then of course add lots of cheese, because cheese is awesome!
