Coliflor Adobado con Frijoles y Quesadillas (Marinated Cauliflower with beans & Quesadillas)

1 packet of Mi Rancho Corn Tortillas
1 head of cauliflower
2-3 tbsp cooking oil
1 tsp turmeric powder
1 tsp smoked paprika powder
1 tsp cumin powder
1 tsp garlic granules
1 tsp cornstarch or potato starch
½ tsp black pepper
½ tsp sea salt

Adobo sauce
1 red bell pepper
½ soaked cashews, overnight then drained
2 jalapenos
⅛ of a red onion
2-3 chipotle pepper in adobo sauce
½ cup vegetable broth
2 generous pinches of salt
1-2 limes, ¼ -⅓ cup freshly squeezed lime juice

1 cup plant based cheese
Lime
Cilantro
Red onion
Cooked beans

Instructions

Preheat the oven at 425 F, while the oven is preheating, rinse cauliflower and chop into large to bite size pieces. Add cauliflower into a baking ceramic or glass dish, add all dry seasonings which include turmeric, smoked paprika, cumin, garlic granules, cornstarch, black pepper, and salt on top of that add your cooking oil.

Mix well until all cauliflower pieces are coated with seasoning. Then bake in the oven for 40 mins. While that’s baking, rinse and chop stems off of bell pepper, jalapenos, and cut a sliver of red onion. You may use a non-stick pan or skillet or a cast iron(medium heat), wIth the smallest dash of oil sear veggies on all sides until semi charred or whatever you may prefer.

Three minutes in add the cashews This should take about 8-10 mins total to char everything. Turn off heat, add all adobo sauce ingredients to a blender and blend until smooth, takes about 45 sec.

By now it should be close to take cauliflower out but if it’s not ready just prepare your beans as you like. Prepare the toppings by finely chopping cilantro and chop onion into slices.

Then take your Mi Rancho corn tortillas and your favorite plant based cheese and make as many quesadillas as you desire. Just put the tortilla on a pan on medium heat, add cheese on top and fold. It takes about 3-4 min total to make the quesadillas.

Once the quesadillas are made, by now the cauliflower is done baking, take the dish out of the oven and add the adobo sauce. Mix well, add 1 whole lime juiced and set aside as you prepare your plate. Add beans, the cauliflower, quesadillas, topped with cilantro, onion, and loads of lime! Provecho.

Notes: Some plant based cheeses don’t melt as great as dairy cheese so I suggest adding an ice cube and covering the pan to steam the quesadillas so the cheese fully melts. Make sure to check on them so they don’t burn, just lower the heat to low medium. If you want to sub the cauliflower to potatoes, just make sure to chop potatoes to 1 inch or 1 ½ inch cubes and bake for the same amount of time as the cauliflower. If you want the potatoes to be extra crispy just add 5-10 minutes. Just make sure to check on them.
