Ensalada de Nopalitos (Cactus Salad)Ofelia Berber "Mama Ofi"
Cactus leaves are widely used in Mexican cooking in soups, with eggs and even in salad. Ensalada de Nopalitos (Cactus Salad) is a traditional side dish with a crisp texture and earthy flavors.
- 1 jar nopalitos (16-20 oz) or fresh nopales
- 3 tbsp. white onion finely chopped
- ½ tsp salt or to taste
- Oil and vinegar dressing
- 1 tbsp. cilantro chopped
- 3 medium tomatoes, blanched, peeled, seeded and chopped
Mix all ingredients together, garnish with cilantro.
