Guacamole Taco BarMi Rancho Kitchen
Top your guacamole with your favorite toppings in Carol Berber’s Guacamole Bar. Fresh pomegranate seeds, diced mango, roasted corn are all offered to create a delicious guacamole taco that is bursting with flavor all on Mama Carol’s THINcredibles Thin Corn Tortillas.
- 2 cups Chicharron Bits
- ½ cup Pepitas
- 1 cup Roasted Corn
- 1 cups Diced Mango
- 4 Sliced Jalapenos
- 1 cup Pico de Gallo
- 1 cup Pomegranate Seeds
- 1 cup Plantain Chips
- 4 Avocados
- 3 Limes- Juiced
- Cilantro for garnish

In a large bowl or Molcajete, mash the avocados until smooth. Add the lime juice and stir to combine. Add a large pinch of salt and pepper to taste.
On a large tray, surround the Molcajete with a selection of toppings in small bowls or freely, creating a beautiful appetizer board. Slightly char your tortillas in over an open flame until soft and bubbly. Place in tortilla warmer or clean kitchen towel to keep warm and serve alongside the Guacamole Bar.
To eat, fill your hot Organic THINcredible Tortillas with mashed avocado and the toppings of your choosing. My Favorite combination is the mashed avocado, topped with pomegranate seeds, pepitas, mango and fresh slices of jalapenos.
