Ingredients

  • Beef:
  • 1 ½ lb Beef Chuck Roast or Beef Rib Roast, Sliced into ¼ inch Slices Across the Grain
  • 1 Large White Onion, Sliced Thinly
  • 2 Tbsp. Olive Oil
  • 2 tsp. Garlic Powder
  • 2 tsp. Oregano
  • 1 tsp. Salt
  • 1 tsp. Black Pepper
  • 2 Tbsp. Lemon Juice
  • 1/3 cup Beef Broth
  • Tzatziki Sauce:
  • 1 ½ cup Plain Greek Yogurt
  • 1 Tbsp. Olive Oil
  • 1 tsp. Lemon Zest
  • Juice of ½ Lemon
  • ½ English Cucumber, Minced
  • 2 Tbsp. Fresh Dill
  • ½ tsp. Salt
  • 1 tsp. Black Pepper
  • 1 Clove Garlic, Finely Minced or Grated

Instructions

Beef:
Toss all ingredients together inside of the Instant Pot. Cover and make sure the valve is sealed. Pres Manuel/Pressure Cook and set the timer for 25 minutes at high pressure. Let the pot slow release for 15 minutes, then move the valve to venting. Open the pot and stir.

Tzatziki Sauce:
Mix all ingredients together in a small bowl and place in the refrigerator until ready to serve. If it’s too thick, add more lemon juice until it’s the desired consistency.

Gyros:
Over an open flame or on a hot dry pan, warm Mama’s Fajita Flour Tortillas until slightly golden and they begin to puff. Keep warm until ready to serve.

Fill each tortilla with a large serving of beef, making sure to drain excess liquid. Top with shredded lettuce, tomatoes, cucumbers and tzatziki sauce. Roll until overlapped and wrap halfway in aluminum foil or parchment paper.
