Low Carb Breakfast Burrito

• Simply Nourished Low Carb Tortillas
• 2-3 eggs beaten
• 2 cooked slices of bacon
• ¼ cup shredded low carb cheese
• ½ avocado sliced
• Salsa Chipotle for dipping/ topping
Instructions
Cook your eggs slowly over low heat. I like to mix my cheese into my eggs (this helps the eggs stick
together inside the burrito) by folding the cheese into the eggs. To assemble, warm Mi Rancho’s Simply
Nourished Low Carb tortillas for about 15 seconds on each side until the tortilla is soft and pliable. Lay
your tortilla down on a flat surface, then on one side lay the eggs vertically, followed by the bacon and
top with the avocado slices. To create the burrito, fold the bottom edge of the tortillas upwards over the
ingredients to meet the top half making sure to pull the tortilla back to tuck in the ingredients. Then fold
the left and right edges of the tortilla over the top. Lastly, roll until everything is tight and secure. This
part is optional but Mi Rancho’s Organic Salsa Chipotle is great to dip your burrito in!
