• 4 Mi Rancho Organic Taco Sliders, Cut into Triangles or Strips
  • 1 Tomato, Diced
  • 1 Red Bell Pepper, Seeded and Diced
  • 1 Yellow Onion, Thinly Diced
  • 1 dash of Salt
  • 1 dash of Pepper
  • Cilantro, Thinly Chopped
  • 4 Eggs
  • 1 tbsp of Canola Oil


  • Cheddar Cheese
  • Side of Sliced Avocado
  • Cilantro to Garnish


Heat the canola oil in a skillet on medium heat for about 1 min then sauté the tortilla pieces until slightly crisp for 1 to 2 minutes. Add the diced tomato, onion, red bell pepper and chopped cilantro. Then cook for 5 min.

In a bowl whisk the eggs until fluffy (optional: whisk together with some milk for extra fluffy eggs!) Add salt and pepper to the eggs. Then, pour the eggs into the skillet and mix with a spatula until eggs are fully cooked. Garnish with cilantro or sliced avocado or add some cheese for some cheesy goodness if you’d like!
