Migas (Tortilla Egg Scramble)

This egg scramble incorporates fresh vegetables, fluffy eggs and our Organic Taco Sliders. This colorful recipe is pleasing to the eye and perfect for Sunday brunch. This recipe allows for flexibility as you can use any of our corn tortillas. Use our Organic THINcredibles for a lighter, lower calorie meal.



  • 4 Mi Rancho Organic Taco Sliders, Cut into Triangles or Strips
  • 1 Tomato, Diced
  • 1 Red Bell Pepper, Seeded and Diced
  • 1 Yellow Onion, Thinly Diced
  • 1 dash of Salt
  • 1 dash of Pepper
  • Cilantro, Thinly Chopped
  • 4 Eggs
  • 1 tbsp of Canola Oil


  • Cheddar Cheese
  • Side of Sliced Avocado
  • Cilantro to Garnish


Heat the canola oil in a skillet on medium heat for about 1 min then sauté the tortilla pieces until slightly crisp for 1 to 2 minutes. Add the diced tomato, onion, red bell pepper and chopped cilantro. Then cook for 5 min.

In a bowl whisk the eggs until fluffy (optional: whisk together with some milk for extra fluffy eggs!) Add salt and pepper to the eggs. Then, pour the eggs into the skillet and mix with a spatula until eggs are fully cooked. Garnish with cilantro or sliced avocado or add some cheese for some cheesy goodness if you’d like!
