Mini Bean and Cheese Burritos for Kids

Sometimes we have to face it that most kids prefer simpler food with less ingredients. An all-time favorite is a Mini Bean and Cheese Burrito on Mama’s Simply Authentic Soft Taco Flour Tortillas. We recommend that you make a bunch in advance and freeze them for a quick snack that you can heat up on the fly.

Instructions

On a flat griddle, warm Soft Taco Flour Tortilla until lightly toasted and it begins to puff. Fill with 2/3 cup of Refried Beans and ¼ cup of shredded cheese. If you’re including rice, add this before the cheese. Fold sides in and then fold large side over and pull backwards. Continue rolling until it’s the shape of a log.

Serve with sour cream, salsa, or mashed avocado.

If you’re making a batch in advance, wrap in parchment paper and then wrap in aluminum foil.

* Before reheating in microwave, be sure to remove aluminum foil. Heat on high for 30 seconds to one minute wrapped in parchment paper. If frozen, allow the burrito to thaw for 30 minutes before heating, or defrost for one minute.

**A fun trick to incorporate vegetables into your child’s meal is to sneak some vegetables into the beans. If possible, mix boiled mashed carrots or butternut squash into your refried beans. They won’t even notice!
