- 1/2 lbs whole chicken breast
- 1/2 large white onion, chopped
- 2 garlic cloves, minced
- Salt and pepper, to taste
- 1 tsp ground cumin
- 5 c chicken broth
- 1 jar of Mi Rancho Organic Salsa Verde
- 1/4 bunch cilantro
- 1-30 oz can hominy
Sear the chicken on both sides in the oil over medium-high heat. Add the onion, garlic and seasonings, and saute for about 2 minutes.
Add the chicken broth and allow this to simmer on medium-low for 15 minutes.
Transfer 1 cup of broth to a blender, along with the jar of Mi Rancho Salsa Verde. Blend on high until completely smooth.
Transfer the chicken from the pot to a cutting board and shred into bite-sized pieces. Transfer the chicken and salsa verde broth back to the pot, along with the hominy, and allow this to simmer for 15 minutes.
Plate and serve with shredded cabbage, onion, cilantro, sliced radish and lime juice!
