Lightly brush toasted side of organic flour tortillas with olive oil and flip.

Lay ¼ cup shredded cheese, ¼ cup eggs, 1 sausage link cut into quartered strips lengthwise.

Roll tightly and secure with a toothpick. Complete until ingredients are depleted.

Bake at 425 until golden brown, about 10 minutes. Slice in half and serve hot with sour cream and hot sauce.
