Shrimp Aguachile Recipe

Ingredients

For the aguachile —
Juice and zest of 6 limes
1 lb shrimp, shells/tails removed and deveined
1-2 serranos
1 garlic clove
8-10 sprigs of cilantro
2 mini cucumbers
Salt, to taste

For the tostadas —
Mi Rancho Organic Corn Tortillas
Cooking spray
Flaky sea salt

Garnish with – red onion, cucumber, cilantro and avocado

Instructions

Preheat the oven to 400 degrees.

Place the Mi Rancho Organic Tortillas on a baking sheet and lightly spray them with cooking oil. Sprinkle over some flaky sea salt and bake them in the preheated oven for 15 minutes, or until crispy.

To make the aguachiles, submerge the shrimp in the lime juice in a medium-sized bowl and allow this to marinate in the fridge for 15-20 minutes.

Once marinated, add the lime juice to a blender, along with the lime zest, serranos, garlic, cilantro, cucumber and a big pinch of salt.

Blend until completely smooth and adjust the seasoning as needed.

Plate the shrimp in an even layer and pour over the blended liquid, then top with slices of red onion, cucumber, avocado and cilantro. Serve with the tostadas and enjoy!
