Mexican Caesar Salad w/ Tortilla StripsCarol Berber
Try Mexican twist on the classic Caesar salad with crispy Mi Rancho Tortilla Strips, pepitas, cotija cheese and a chile cilantro dressing to die for!
- Romaine Lettuce, washed and chopped
- Cotija Cheese
- Shaved Parmesan
- Roasted Pepitas (pumpkin seeds)
- Mi Rancho Pre-cut Tortilla Strips (Fry in Oil)
- 1 4oz can green chiles
- 2 tbsp. pumpkin seeds
- 2 cloves garlic
- 1/3 cup olive oil
- T tbsp. fresh lime juice
- ½ bunch fresh cilantro (stems removed)
- 3 tbsp. mayonnaise
- Salt & Pepper to Taste
Fry Mi Rancho pre-cut tortilla strips in very hot oil until crisp. Salt lightly to taste.
Blend all dressing ingredients together in a blender until smooth and combined.
In large salad bowl, top romaine lettuce with crumbled cotija cheese, parmesan, pepitas and strips. Dress to your liking.
