To make sure tortillas are pliable and ready to roll, place in warmer to allow tortillas to heat thru. You can also warm on an open flame or in a dry skillet.
Fill each tortilla with about 2 tbsp. of shredded beef, being careful to drain an excess liquid. Roll tightly into ¾” thick taquitos. Secure with a toothpick to keep closed if needed.
Heat canola oil to 350 degrees in a large pot. Place rolled taquitos into hot oil, seam side down. Cook until golden brown, about 30-60 seconds. If oil doesn’t completely cover the taquito, be sure to flip halfway through until golden brown. Place taquito on a cooling rack or paper towel to drain excess oil. Lightly salt.
Serve hot with Spicy Guacamole.
